Wakefield’s Apple Bread

Ingredients:

4 oz Self Raising Flour

4 oz Butter

1.5 oz Demerara Sugar

2 eggs

2 peeled medium sized organic home-grown cooking apples handpicked by a BFG (in this case Uncle Tom) *

1.5 tsp Cinnamon

1 tsp Baking Powder

½ tsp Vanilla extract

 

Method:

  1. Preheat oven to 160C (fan)
  2. Butter and line loaf tin
  3. Chop the apples into tiny pieces
  4. Cream together butter and sugar
  5. Whisk in the eggs slowly add a little bit of the flour.
  6. Add the vanilla
  7. Sieve together the flour, cinnamon and baking powder, then fold into the mixture
  8. Fold in the apple
  9. Put the mixture into the tin and bake for 35-40minutes
  10. Its done when the skewer comes out clean
  11. Leave in the tin for 10 minutes to cool and then transfer to wire rack.

 

(notes: I’ve tried to find a way to make a cake mixture without sugar, but the baking physicists say it’s not possible as the sugar is needed to form the mixture, not just for sweetness.  This is not a particularly sweet cake (which is what I was aiming for) so if you want a sweeter version Id imagine eating apples would be better?)

* I know not everyone has a BFG handy 😊
