Ingredients:
4 oz Self Raising Flour
4 oz Butter
1.5 oz Demerara Sugar
2 eggs
2 peeled medium sized organic home-grown cooking apples handpicked by a BFG (in this case Uncle Tom) *
1.5 tsp Cinnamon
1 tsp Baking Powder
½ tsp Vanilla extract
Method:
- Preheat oven to 160C (fan)
- Butter and line loaf tin
- Chop the apples into tiny pieces
- Cream together butter and sugar
- Whisk in the eggs slowly add a little bit of the flour.
- Add the vanilla
- Sieve together the flour, cinnamon and baking powder, then fold into the mixture
- Fold in the apple
- Put the mixture into the tin and bake for 35-40minutes
- Its done when the skewer comes out clean
- Leave in the tin for 10 minutes to cool and then transfer to wire rack.
(notes: I’ve tried to find a way to make a cake mixture without sugar, but the baking physicists say it’s not possible as the sugar is needed to form the mixture, not just for sweetness. This is not a particularly sweet cake (which is what I was aiming for) so if you want a sweeter version Id imagine eating apples would be better?)
