Tuesday Thoughts – 4

Reading:

‘Face It’ Debbie Harry. This woman’s life was insane. I had no idea how insane! It’s a very fragmented read but I’m enjoying it.  She is another example of how when you are crystal clear in your vision you will reach your goal.

Listening:

Are you like me and struggle with mediation? I’m constantly fighting myself.  However I’ve discovered that if I do short bursts, it suits me better rather than sitting or lying for longer periods.  So, if like me you struggle to settle your mind, try this little short breathing one and see how you go, its only 5 minutes:

Exercise:

Plain old walking this week. Our new arrival (Rua) has put the pressure on us to get out walking more.  He’s only little, but full of energy and I can see he will need hours of exercise when he’s older.

Walking has many health benefits, including lowering blood pressure, body mass, blood glucose levels, cholesterol and depression. So grab your runners and off you go.

Eating:

Have you ever tried this soup? It’s a firm favourite in our house these winter months. You can use tinned chestnuts or you can get them ready cooked in pouches from Lidl.

Ingredients

4 chopped rashers smoked streaky bacon

drizzle of olive or rapeseed oil

1 chopped onion

1 crushed garlic clove

6 peeled and chopped parsnips

1 chicken stock cube

400ml milk

leaves from 4 thyme sprigs

200g cooked, chopped chestnuts

Fry the rashers of bacon in the oil until crisp. Scoop out half the bacon and set aside until later. Add the onion and garlic to the pan, stirring until tender, then add the parsnips. Cook for another 5 mins, then crumble in the chicken stock cube. Add the milk, 600ml water, the thyme and chestnuts. Cover and simmer for 30 mins until the parsnip is tender. Blitz with a hand blender, then season to taste. Ladle into bowls and top with the reserved bacon.
