This is adapted from a bbcgoodfood.com recipe
Ingredients:
140g butter
80g caster sugar
2 eggs
140g self raising flour
1 tsp baking powder
2 ripe bananas mashed
1 tsp Vanilla extract
Method:
- Preheat oven to 160C
- Butter and line a loaf tin
- Cream together the butter and sugar
- Slowly add the eggs and vanilla with a bit of the flour
- Sieve together the flour and baking powder and fold in
- Fold in the mashed bananas
- Put into tin and bake for 35-40 minutes until the skewer comes out clean
- Leave in tin for 10 mins and transfer to wire rack
(notes: I’ve tried to find a way to make a cake mixture without sugar but the baking physicists say it’s not possible as the sugar is needed to form the mixture, not just for sweetness. The original recipe has 140g sugar but that would be far to sweet for us. This also tastes great when toasted. So, I cut it up into slices and freeze and pop a slice in the toaster as required)
